Quick Healthy Dinner In Less Than 5.5 Minutes


Last week I got home late from work. I was pretty tired after a long day in the sun training clients and Bron was at Netball training.

Our rule is first person home cooks. Fair enough I thought. It looks like it’s my turn tonight.

Not what you always feel like doing when all you want to do is collapse on the lounge and walk in the door to a hot meal waiting for you.

Sound familiar?

How many times has this happened to you and you were stuck with what to cook. I’m sure most busy people are like that and want to eat healthy right?

But being tired is not an excuse to just say stuff it and eat rubbish. We just need more options of quick healthy meals right? Well here’s another one. All with gluten free ingredients of course.

This one took 5 minutes 25 seconds on the stop watch.

Try it for yourself.

Ingredients:
1 can mixed beans
handful of spinach
2 large mushrooms
1 large carrot
1 cup peas

Steps:
Simply oil up and heat the frying pan. I put the frozen peas in first to allow them time to cook as they’d need the longest.

While that was cooking away I opened and washed the can of mixed beans and let them sit while I started chopping the carrots.

Throw them into the frying pan when they’re chopped and ready.

Chop up the mushrooms and add them and the beans at the same time.

Mix all of the ingredients around.

This should pretty much take you to around the 4.5 minute mark. I added a little bit of sweet chilli sauce for a little zing but this is purely optional.

Mix the sauce in if you decide to go with it.

Now chop up the spinach and throw that on top. Spinach doesn’t need long. I probably gave it about 30 secs or so.

You don’t want to overcook the veggies as they’ll lose some of their nutrients. You want to eat them as nice, crispy vegetables.

At 5:25 on the stop watch it was ready to serve. I added some flax seed oil as you can see over the top of the quick healthy dinner to add some extra taste (never cook with it though!).

Mission accomplished.

I was able to eat healthy, eat gluten free and continue my path to weight loss success just by dropping the excuses and taking action.

When you need healthy meals that are really quick like this, you don’t really have time to cook up some meat so the veggie option is always a great alternative and still gives you plenty of protein with all the mixed beans.

I love your quick dinner ideas. There’s no reason to eat junk or go out to eat if you just keep a few ingredients on hand. If I’ve run out of fresh veggies, I know it’s time to go to the store.

Glad you like Linda! You’re absolutely right, there is no excuse for not eating healthy. This shows that you don’t need to cook a gourmet meal for 1 hour each night. People need to stop making excuses and just take action. It’s not rocket science!

I really like the simple one-dish meal idea. This could really be versatile. I like garbanzo beans best, so I would probably use those instead of mixed beans. Then I might add some indian-style spices and I’d be set! You could really change it up every time with different veggies and spices. Thanks for the idea!
